I have not seen that effect before.

I think what is happening is that water droplets or ice crystals are growing in size after they form close to the engine exhaust. The distance from the airplane is therefore a measure of time from droplet or ice crystal formation and particle size. The colours are iridescence and the different colours result from the different particle sizes along the exhaust trail.
